Chilli Avocado, Garlic Mushrooms and Pine Nuts on toast – Vegan

One of the eight limbs of Yoga, Yamas, includes Ahimsa – Compassion. Many Yoga practitioners choose a vegetarian or vegan diet as a way of living a more Ahimsa lifestyle. Compassion for all living beings and compassion for one’s self by eating healthy food. I will occasionally post some vegan recipes on this blog that I have created myself.

Chilli Avocado, Garlic Mushrooms and Pine Nuts on toast – Serves 2

Ingredients:

500g Mushrooms – whatever type you like, I used ordinary white mushrooms but have used mixed forest mushrooms in the past

3 Ripe Avocados

100g Pine Nuts

4 Slices of Brown Bread

1 1/2  Teaspoons of Garlic Granules

3 Tablespoons of Olive Oil

1 Teaspoon of Chilli Powder

1/2 Teaspoon of Smoked Paprika

Salt and Pepper to taste

Method:

Cut in half the avocados and scoop out the inside into a bowl. Mash the avocados with 1 tablespoon of Olive Oil, 1 teaspoon of Chilli Powder and 1/2 teaspoon of Smoked Paprika. Add salt and pepper to taste and feel free to add more chilli if you like it spicier.

Chop the mushrooms and fry in 2 tablespoons of olive oil in a non-stick frying pan over a medium heat for approx 10 minutes until they are starting to brown. Towards the end of cooking the mushroom add the 1 1/2 teaspoons of Garlic Granules and cook for a further few minutes.

Toast 4 slices of bread. Place two slices on each plate and divide the avocado mixture evenly across all slices. Divide the mushrooms evenly on top of the avocado.

Using the same non-stick frying pan used for the mushrooms, place the Pine Nuts in the pan and stir continually until they start to brown and toast. Then evenly divide the pine nuts across the mushrooms. Serve and Enjoy.

Feel free to use less Pine Nuts, I love them and like quite a few!

Yoga Quest by Paul Fox – Book Review

Sometimes we are lucky enough to find the right book to read at the right time in our lives. Yoga Quest was certainly the right book for me at this point in my Yoga journey.

Paul Fox ,the author, is the current Chair of the British Wheel of Yoga. His knowledge and experience of his subject matter is evident.

Yoga Quest is a really easy read and quite the page turner. The author’s skill in this novel is to educate you as you read. The journey of the main character, Joe Knightly on his Yoga Quest to discover the true meaning of Yoga, is a wonderful vehicle for the readers own learning.

Joe’s 2 year long Yoga Quest takes in all of the main types of Yoga, the history of Yoga and the main famous teachers. As a reader I related to the main characters reaction to certain aspects of the Yoga journey and the current trends in yoga. The reader is given a comprehensive overview of Yoga through the plot of the book. The foreign locations in the book really come alive and make me want to visit them.

It is not often I read a book and feel the need to have pen and paper to hand to jot down things to enquire into myself. After finishing reading Yoga Quest I now have a list which forms my very own Yoga Quest and I am thoroughly looking forward to starting it! I also have a renewed appreciation and love for Janu Sirsasana!

If you are interested in Yoga, new to Yoga or even on your own Yoga journey, I would recommend this book to you. It is a great read!

Feedback from a couple new to Yoga

We just received some lovely feedback from two new clients who were new to Yoga. Carrina and Steve would struggle to get to a normal yoga class due to their commitments and Yogasmiths took the Yoga class to them via a one to one session at their home in Lower Heswall.
